INGREDIENTS
1 medium Ripe Banana (118g)
1.5 scoops Chocolate Whey Protein Powder (45g)
1/2 cup ground Rolled Oats (40g)
1 large Egg (50g)
1 tablespoon Unsweetened Cocoa Powder (5g)
1/4 cup Unsweetened Almond Milk (60g)
1/2 teaspoon Baking Powder (2.5g)
PREPARATION
Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line with silicone liners for 2-4 muffins, depending on desired size.
In a medium bowl, mash the ripe banana until smooth. Mix in the egg until well combined.
Add the chocolate whey protein powder, ground rolled oats, unsweetened cocoa powder, and baking powder to the banana mixture. Stir until just combined.
Slowly pour in the unsweetened almond milk and mix until the batter is smooth and cohesive. Avoid overmixing to keep the muffins light.
Spoon the batter into the prepared muffin tin, filling each mold about 3/4 full.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
Allow the muffins to cool slightly in the tin before transferring them to a wire rack. Enjoy warm or at room temperature.
