INGREDIENTS
6 oz Salmon Fillet (170g)
200g White Potato
100g Asparagus
1 Garlic Clove
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil. Once hot, place the salmon skin-side down and sear for about 3-4 minutes until the skin is crispy. Flip and cook for another 3 minutes until just cooked through.
While the salmon cooks, peel and chop the potato into chunks. Place in a pot with a bit of water and add the garlic clove. Boil until tender, about 15-20 minutes.
Drain the potatoes and garlic, then mash them until smooth. Season with salt and pepper to taste.
Steam the asparagus in a steamer or in a covered pan with a little water for 4-5 minutes until tender-crisp.
Plate the seared salmon, a generous serving of garlic mashed potatoes, and a side of steamed asparagus. Serve warm and enjoy your balanced, nutritious dinner.
