Enjoy a vibrant, protein-packed dish featuring crispy golden tofu paired with silky, garlicky spinach in a light, creamy sauce. This dish balances textures and flavors beautifully, making it a satisfying option for any meal.
INGREDIENTS
300g Firm Tofu
2 tbsp Hemp Seeds
2 cups Fresh Spinach
2 cloves Garlic
1 tbsp Olive Oil
1/4 cup Unsweetened Almond Milk
1 tsp Cornstarch
Salt and Pepper to taste
PREPARATION
Press the firm tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
In a shallow bowl, season the tofu cubes lightly with salt and pepper. Optional: dust a little cornstarch over the tofu to help achieve an extra crispy coating.
Heat olive oil in a non-stick skillet over medium-high heat. Carefully add the tofu cubes and pan-sear until all sides are golden and crispy, about 3-4 minutes per side.
While the tofu is cooking, mince the garlic and set aside.
In a separate pan over medium heat, add the minced garlic and a splash of olive oil. Sauté until fragrant, then add the fresh spinach. Cook until wilted, about 2-3 minutes.
Mix the unsweetened almond milk with the remaining cornstarch to create a slurry, then stir into the spinach. Cook for another minute until the sauce slightly thickens, creating a creamy garlic spinach.
Once the tofu is crispy and the spinach is creamy and seasoned, plate the tofu and top with the spinach mixture.
Sprinkle hemp seeds over the top for an extra protein boost and a pleasant nutty crunch. Adjust seasoning with additional salt and pepper if needed.
