Enjoy a balanced dinner featuring a delicately seared salmon paired with sweet, roasted sweet potatoes and lightly steamed broccoli. Each component is enhanced with a drizzle of olive oil, perfectly marrying flavors and textures for a wholesome, nutrient-dense meal.
INGREDIENTS
2.8 oz Salmon Fillet
1 medium (1.5 portions) Sweet Potato
1/2 cup Broccoli
0.75 tbsp Olive Oil (for salmon)
1 tsp Olive Oil (for sweet potato)
1 tsp Olive Oil (for broccoli)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F for roasting the sweet potatoes.
Wash the sweet potato thoroughly, then cut it into cubes. Toss with 1 teaspoon of olive oil, a pinch of salt and pepper, and spread evenly on a baking tray.
Roast the sweet potato cubes in the preheated oven for about 25-30 minutes until they are tender and slightly caramelized.
While the sweet potatoes are roasting, season the salmon fillet lightly with salt and pepper.
Heat 0.75 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the salmon and sear for about 3 minutes on each side until a golden crust forms and the fish is just cooked through.
Steam 1/2 cup of broccoli until tender yet still crisp, about 3-4 minutes. Drizzle with 1 teaspoon of olive oil and a pinch of salt.
Plate the seared salmon alongside the roasted sweet potatoes and steamed broccoli, and serve immediately.
