INGREDIENTS
6 oz Pork Tenderloin
2 cups Brussels Sprouts
1 tbsp Grated Fresh Ginger
2 cloves Garlic
1 tbsp Honey
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Oil
PREPARATION
Preheat your oven to 425°F.
Trim any excess fat from the pork tenderloin and pat dry with paper towels.
In a small bowl, whisk together grated ginger, minced garlic, honey, soy sauce, and sesame oil to form the glaze.
Place the pork tenderloin on a baking tray. Brush half of the glaze over the pork, reserving the rest.
Roast the pork in the oven for about 20-25 minutes or until it reaches an internal temperature of 145°F, turning once and basting with more glaze halfway through.
While the pork is roasting, halve the Brussels sprouts and toss them with a light drizzle of olive oil or additional sesame oil, salt, and pepper on a separate baking sheet.
Roast the Brussels sprouts in the same oven for about 15-20 minutes until they are crispy on the edges.
Once the pork is done, let it rest for 5 minutes before slicing.
Serve slices of the glazed pork tenderloin alongside a generous serving of crispy roasted Brussels sprouts, drizzled with any remaining glaze.
