INGREDIENTS
2 ounce equivalents (dry) Whole Wheat Spaghetti (56g)
2 slices Lean Bacon (30g)
1 large Egg (50g)
0.5 oz Parmesan Cheese (14g)
0.5 cup Green Peas (80g)
1 tsp Olive Oil (4.5g)
1 clove Garlic (3g)
Pinch Black Pepper
Pinch Salt
PREPARATION
Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package directions until al dente. Reserve about 1/4 cup of pasta water before draining.
While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the garlic and sauté for 30 seconds until fragrant.
Add the lean bacon slices to the skillet and cook until crispy on both sides. Remove the bacon and crumble or chop it into bite-sized pieces.
In a small bowl, whisk together the egg, grated Parmesan cheese, a pinch of salt, and black pepper.
Return the drained pasta to the skillet with the garlic-infused oil. Stir in the green peas and crumbled bacon.
Remove the skillet from heat and quickly pour in the egg mixture, stirring vigorously to create a creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.
Taste and adjust seasoning with extra salt and pepper, if needed, then serve immediately.
