INGREDIENTS
300g Firm Tofu
1 cup chopped Broccoli
1 medium Red Bell Pepper
1 medium Carrot
1/2 cup Sugar Snap Peas
1 tbsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Rice Vinegar
1 tbsp Sesame Seeds
2 cloves Garlic
1 tsp Fresh Ginger, grated
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-size cubes.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes to the pan and allow them to fry until they are golden and crispy on all sides.
Add minced garlic and grated ginger to the pan and stir for about 30 seconds until fragrant.
Toss in the broccoli, sliced red bell pepper, julienned carrot, and snap peas.
Drizzle the low sodium soy sauce and rice vinegar over the vegetables and tofu, stirring to combine.
Stir-fry everything together for about 4-5 minutes until the vegetables are tender but still crisp.
Remove from heat and sprinkle sesame seeds over the top.
Serve immediately and enjoy your crispy sesame tofu stir-fry!
