1 medium Sweet Potato
1 medium Red Bell Pepper
1/4 cup chopped Yellow Onion
1 whole Egg
2 Egg Whites
1 cup Fresh Spinach
1 tsp Olive Oil
1 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Dice the sweet potato into small cubes and slice the red bell pepper and onion into bite-sized pieces.
Slice the chicken sausage into rounds.
Toss the sweet potato, bell pepper, onion, and sausage with olive oil, garlic powder, salt, and pepper on a sheet pan.
Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until the sweet potato is tender and the sausage is slightly crispy on the edges.
Meanwhile, in a small bowl, whisk together the whole egg and egg whites.
