INGREDIENTS
200g Extra Firm Tofu
1 cup chopped Broccoli (91g)
1 medium Carrot (61g)
1 medium Red Bell Pepper (119g)
1/2 cup Sugar Snap Peas (40g)
1/2 cup Shelled Edamame (78g)
1 tbsp Toasted Sesame Seeds (9g)
1 tbsp Low-Sodium Soy Sauce (15g)
1 tsp Sesame Oil (5g)
2 cloves Garlic (6g)
PREPARATION
Press the tofu for at least 15 minutes to remove excess water. Cut tofu into 1-inch cubes.
Heat a non-stick pan over medium-high heat with sesame oil. Add the tofu cubes and stir-fry until all sides are golden and crispy, about 6-8 minutes.
Chop broccoli, carrot, red bell pepper, and sugar snap peas. Mince the garlic.
In the same pan, add the garlic and stir for about 30 seconds until fragrant.
Add the chopped vegetables and edamame to the pan. Stir-fry for 4-5 minutes until vegetables are crisp-tender.
Drizzle low-sodium soy sauce over the tofu and vegetables, tossing well to incorporate all flavors.
Sprinkle toasted sesame seeds over the stir-fry and give one last gentle toss.
Serve warm and enjoy your flavorful, protein-packed meal.
