INGREDIENTS
5 oz Sirloin Steak
1 medium Sweet Potato
2 tbsp Unsalted Butter
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Bring the steak to room temperature and season both sides with salt and pepper.
Peel and dice the sweet potato. Boil in lightly salted water until tender, about 15-20 minutes.
While the sweet potato cooks, trim the green beans and mince the garlic.
Heat a non-stick skillet over medium-high heat. Add the 2 tsp of olive oil and sauté the garlic until fragrant, about 30 seconds, then add the green beans and cook until tender-crisp, about 5-7 minutes. Season with a pinch of salt.
For the steak, heat a cast iron or heavy skillet over high heat. Sear the steak for about 3 minutes per side (adjust time based on preferred doneness). Let the steak rest for 5 minutes before slicing.
Drain the sweet potato and mash it thoroughly with the 2 tbsp of unsalted butter. Season with a bit of salt and pepper.
Plate the sliced steak alongside a generous serving of sweet potato mash and garlic green beans. Serve warm and enjoy.
