INGREDIENTS
6 oz Cod Fillet (approx. 170g)
1 medium Sweet Potato (approx. 114g)
1 tbsp Extra Virgin Olive Oil
2 sprigs Fresh Rosemary
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and place the sweet potato, washed and cut into cubes or slices, on it.
Drizzle half the olive oil over the sweet potatoes; sprinkle a pinch of salt and pepper, and toss to coat evenly.
Place the cod fillet on a separate portion of the baking sheet. Drizzle the remaining olive oil over the fish and season with salt, pepper, and lay rosemary sprigs on top.
Bake the fish and sweet potatoes in the preheated oven for about 15-20 minutes, or until the fish flakes easily with a fork and the sweet potatoes are tender.
Remove from the oven, plate the fish alongside the roasted sweet potatoes, and garnish with additional fresh rosemary if desired.
