7 oz Salmon Fillet
8 asparagus spears
1 medium potato (approx 160 g)
1 tsp Olive Oil
1/3 cup Plain Nonfat Greek Yogurt
1 Garlic Clove
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season generously with salt and pepper.
Heat a nonstick skillet over medium-high heat and add the olive oil. Once the oil is shimmering, place the salmon skin-side down. Sear for 4-5 minutes until a crispy golden crust forms, then gently flip and cook for another 3-4 minutes until the salmon is just cooked through. Remove and keep warm.
Meanwhile, peel and cube the potato. Boil in lightly salted water until tender, about 15-20 minutes.
