The tofu is marinated in a blend of spices and lightly crisped in the oven, while the vegetables are roasted to perfection, offering a delightful mix of textures and flavors.
INGREDIENTS
350g Firm Tofu
1 medium Sweet Potato (150g)
100g Green Beans
1 teaspoon Olive Oil
0.5 teaspoon Garlic Powder
0.5 teaspoon Onion Powder
0.5 teaspoon Paprika
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Press the tofu lightly with paper towels to remove excess moisture. Cut the tofu into 1-inch cubes.
In a bowl, combine the tofu cubes with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.
Spread the tofu evenly on one side of the baking sheet. On the other side, arrange peeled and cubed sweet potato and trimmed green beans. Lightly season the vegetables with salt and pepper, and add a drizzle more olive oil if desired.
Place the baking sheet in the preheated oven and roast for 25-30 minutes, turning once halfway through, until the tofu is crispy and the vegetables are tender and lightly browned.
Remove from the oven, adjust seasoning if needed, and serve warm.
