1/2 cup Chickpeas (~82g)
1 cup Green Beans (~125g)
1 tbsp Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Rinse and drain the chickpeas. Pat them dry with a paper towel, then toss with a pinch of salt, pepper, and half the minced garlic.
Spread the chickpeas on a small baking sheet and roast in the oven for 20-25 minutes until they turn crispy, stirring once halfway through.
While the chickpeas roast, pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add the olive oil and once hot, place the salmon skin-side down. Sear for 3-4 minutes until the skin is crispy.
Flip the salmon and cook for an additional 3-4 minutes until the salmon is just cooked through. Remove from the skillet and set aside.
