INGREDIENTS
250g Extra-Firm Tofu
150g Broccoli
2 tbsp Natural Peanut Butter
1 tbsp Light Soy Sauce
1 tsp Maple Syrup
1 clove Garlic
1 tbsp Lime Juice
1 tsp Sesame Oil
1 tsp Olive Oil
PREPARATION
Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
Press the tofu to remove excess moisture, then cut it into even cubes.
In a bowl, whisk together peanut butter, soy sauce, maple syrup, minced garlic, lime juice, and sesame oil until smooth. If the sauce is too thick, add a splash of water to reach desired consistency.
Gently toss the tofu cubes in a bit of the sauce until evenly coated. Spread them out on one baking sheet.
Toss the broccoli florets with olive oil, and a pinch of salt and pepper. Arrange on the second baking sheet in a single layer.
Bake the tofu for about 25-30 minutes, turning halfway through, until the edges become crisp and golden.
Simultaneously, roast the broccoli for 15-20 minutes until tender with slight browning on the edges.
Plate the crispy baked tofu over a bed of roasted broccoli and drizzle any remaining peanut sauce on top. Serve immediately and enjoy!
