INGREDIENTS
6 oz Shrimp (approx. 170g)
150g Broccolini
1 tablespoon Extra Virgin Olive Oil
3 Garlic Cloves
1/2 Lemon
1/4 teaspoon Salt
1/8 teaspoon Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) to roast the broccolini.
Toss the broccolini in half of the olive oil, a pinch of salt, and pepper. Spread evenly on a baking sheet.
Roast the broccolini in the preheated oven for about 12-15 minutes until tender and slightly crispy on the edges.
While the broccolini roasts, pat the shrimp dry with paper towels and season lightly with salt and pepper.
Heat the remaining olive oil in a large skillet over medium-high heat.
Add the minced garlic (from 3 cloves) to the sizzling oil. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
Place the shrimp in the skillet in a single layer. Sear for 2 minutes on one side until they turn pink and develop a nice crispy edge.
Flip the shrimp and cook for an additional 2 minutes until cooked through. Squeeze half a lemon over the shrimp during the last minute of cooking.
Plate the shrimp alongside the roasted broccolini and serve immediately.
