Crispy Peanut Tofu with Fresh Steamed Greens
Enjoy a delightful balance of textures and flavors in this dish where crispy, golden tofu cubes are tossed in a rich, savory peanut sauce and served alongside vibrant steamed broccoli and edamame for an extra protein boost.
INGREDIENTS
200g Extra Firm Tofu
2 tbsp Natural Peanut Butter
1/2 cup Shelled Edamame
1 cup Broccoli Florets
2 tbsp Cornstarch
1 tbsp Soy Sauce
1 tsp Garlic Powder
1/2 tsp Ginger Powder
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a shallow bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated.
Heat a non-stick skillet over medium-high heat. Add a small amount of oil and pan-fry the tofu until all sides are crispy and golden brown. Remove and set aside.
In a separate small bowl, whisk together the natural peanut butter, soy sauce, garlic powder, and ginger powder. If the sauce is too thick, add a splash of warm water to reach a drizzling consistency.
Steam the broccoli florets and shelled edamame until tender but still vibrant, about 4-5 minutes.
Toss the crispy tofu with the prepared peanut sauce until evenly coated.
Plate the sauced tofu alongside the steamed broccoli and edamame. Serve immediately and enjoy the mix of crunchy, creamy, and fresh flavors.
