INGREDIENTS
5 oz Chicken Breast
0.5 cup cooked Brown Rice
1 cup chopped Bell Peppers
0.25 cup chopped Onion
1 tsp Olive Oil
0.5 cup Low-Sodium Chicken Broth
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Heat olive oil in a large pot over medium heat.
Add chopped onions and garlic, sautéing until softened and fragrant.
Add the 5 oz of chicken breast (cut into bite-sized pieces) to the pot, and season with salt and pepper.
Cook the chicken for about 3-4 minutes until lightly browned on all sides.
Stir in the chopped bell peppers and continue cooking for another 2 minutes.
Add the uncooked brown rice (previously rinsed) and pour in the low-sodium chicken broth along with a little extra water if needed to cover all ingredients.
Bring the mixture to a simmer, then cover and reduce the heat to low.
Let it cook for about 25-30 minutes or until the rice is tender and has absorbed most of the liquid.
Taste and adjust the seasoning, then serve warm.
