A satisfying morning scramble featuring fluffy egg whites and lean turkey sausage, combined with lightly sautéed spinach and perfectly roasted sweet potato. This dish offers a harmonious blend of textures and flavors, ideal for kickstarting your day with balanced nutrition and vibrant taste.
INGREDIENTS
1 cup Egg Whites (243g)
1.25 oz Turkey Sausage (approx. 35g)
1 cup Fresh Spinach (30g)
0.75 medium Sweet Potato (approx. 98g)
2 tsp Olive Oil (10g)
PREPARATION
Preheat your oven to 400°F for roasting the sweet potato.
Wash the sweet potato thoroughly, pat dry, and cut into cubes. Toss the cubes with 1 tsp of olive oil and a pinch of salt if desired.
Spread the sweet potato cubes on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized, stirring halfway through.
While the sweet potato is roasting, heat a nonstick skillet over medium heat and add the remaining 1 tsp of olive oil.
Add the turkey sausage to the skillet, breaking it up with a spatula, and cook for about 3-4 minutes until lightly browned.
Pour in the egg whites and add the spinach. Gently scramble everything together, cooking until the spinach wilts and the egg whites are fully set.
Plate the scramble and top with the roasted sweet potato cubes. Serve warm as a balanced, nutritious breakfast.
