INGREDIENTS
6 oz Lean Ground Turkey
1/2 cup Cooked Brown Rice
1 large Bell Pepper
1/4 cup chopped Yellow Onion
1 clove Garlic
1/2 cup Diced Tomatoes
1/2 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Cut the top off the bell pepper and remove the seeds and membranes. Set aside.
In a skillet, heat the olive oil over medium heat. Sauté the chopped onion and garlic until soft and fragrant, about 2-3 minutes.
Add the lean ground turkey to the skillet, breaking it apart as it cooks. Season with salt and pepper, and cook until the turkey is nearly browned.
Mix in the cooked brown rice and diced tomatoes. Stir well and let the flavors meld for another 2 minutes.
Stuff the prepared bell pepper with the turkey and rice mixture, packing it well.
Place the stuffed bell pepper in a baking dish and cover with foil.
Bake in the preheated oven for about 25-30 minutes until the pepper is tender and the filling is heated through.
Remove from the oven and let slightly cool before serving.
