INGREDIENTS
300g Extra Firm Tofu
100g Shelled Edamame
1 medium Red Bell Pepper
1 cup Broccoli
1 medium Carrot
2 cloves Garlic
1 teaspoon Fresh Ginger
1 teaspoon Sesame Oil
1 tablespoon Low-Sodium Soy Sauce
1 teaspoon Toasted Sesame Seeds
1 teaspoon Cornstarch
PREPARATION
Press the tofu for about 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
In a small bowl, mix the cornstarch with a dash of water to create a slurry. Toss tofu cubes gently in the slurry until evenly coated.
Heat a non-stick skillet over medium-high heat with sesame oil. Add tofu cubes and pan-fry until all sides are golden and crispy, about 8-10 minutes. Remove tofu and set aside.
While tofu cooks, prepare the vegetables. Julienne the red bell pepper and carrot, and cut the broccoli into bite-sized florets. Mince the garlic and grate the ginger.
In the same skillet, add the garlic and ginger, sauté for 30 seconds until fragrant.
Add the red bell pepper, broccoli, carrot, and shelled edamame to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Return the crispy tofu to the skillet and drizzle with low-sodium soy sauce. Toss everything gently to combine and heat through.
Transfer the stir-fry to a serving dish and sprinkle toasted sesame seeds on top.
Serve immediately and enjoy your vibrant, protein-packed meal.
