1 cup Canned Chickpeas (240g)
2 Tbsp Chickpea Flour (15g)
1 Tbsp Tahini (15g)
1/2 cup Nonfat Greek Yogurt (120g)
1 cup Mixed Greens (30g)
2 Tbsp Fresh Parsley
2 Tbsp Fresh Cilantro
1 clove Garlic
1/2 tsp Ground Cumin
1/2 tsp Ground Coriander
1 Tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a food processor, combine the drained chickpeas, fresh parsley, cilantro, garlic, ground cumin, ground coriander, salt, and pepper. Pulse until the mixture is coarse but well combined.
Transfer the mixture to a bowl, stir in the chickpea flour to help bind the ingredients, and form into 4 even patties.
Place the patties on the prepared baking sheet and bake for 20-25 minutes, flipping halfway through, until the falafel are golden and crispy on the edges.
