INGREDIENTS
300g Extra Firm Tofu
1/2 cup Shelled Edamame
1 cup Broccoli, chopped
1 medium Red Bell Pepper, sliced
1/2 cup Snap Peas
1 tsp Sesame Seeds
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
2 cloves Fresh Garlic, minced
1 tsp Fresh Ginger, grated
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut it into 1-inch cubes.
In a bowl, toss the tofu cubes with a pinch of salt and half of the sesame oil. Spread the cubes on a baking sheet lined with parchment paper and bake at 400°F for 20-25 minutes until crispy, flipping halfway through.
While the tofu bakes, prepare the stir-fry sauce by mixing the low-sodium soy sauce, minced garlic, grated ginger, and remaining sesame oil in a small bowl.
Heat a non-stick pan over medium-high heat. Add the chopped broccoli, sliced red bell pepper, and snap peas. Sauté the vegetables for about 3-4 minutes until they begin to soften but still retain crispness.
Add the shelled edamame to the vegetables and continue to stir-fry for another 2 minutes.
Once the tofu is crispy, add it to the pan along with the stir-fry sauce. Toss everything gently to combine and heat through for an additional 2 minutes.
Sprinkle sesame seeds over the stir-fry just before serving. Enjoy your balanced and flavorful meal immediately.
