INGREDIENTS
4 oz Lean Ground Turkey
1 Large Egg
1/4 cup Rolled Oats
1/4 cup Chopped Onion
1 clove Minced Garlic
1 tbsp Tomato Paste
1/2 tsp Smoked Paprika
1 slice Turkey Bacon
1 tsp Apple Cider Vinegar
Salt and Pepper to taste
PREPARATION
Preheat oven to 375°F and lightly grease a small loaf pan or line with parchment paper.
In a bowl, combine lean ground turkey, egg, rolled oats, chopped onion, minced garlic, salt, and pepper. Mix until just combined, being careful not to overwork the mixture.
Gently form the mixture into a loaf shape and transfer to the prepared pan.
In a separate small bowl, whisk together tomato paste, smoked paprika, and apple cider vinegar to create the smoky BBQ glaze.
Spread the glaze evenly over the top of the meatloaf.
Place in the oven and bake for 25-30 minutes until the meatloaf is cooked through.
While the meatloaf is baking, cook the turkey bacon in a skillet over medium heat until it becomes crispy.
Once the meatloaf is done, remove from the oven and top with the crispy turkey bacon. Allow to rest for a few minutes before slicing and serving.
