This dish beautifully balances the rich, buttery flavors of the salmon with the light, fresh taste of spinach and the wholesome goodness of brown rice, offering a satisfying and nutritious dinner.
INGREDIENTS
7 oz Salmon Fillet
1.5 cups cooked Brown Rice
2 cups Fresh Spinach
1/2 teaspoon Olive Oil
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Season the salmon fillet with a pinch of salt and black pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon skin-side down for about 4-5 minutes until the skin is crispy.
Flip the salmon and cook for an additional 3-4 minutes until the flesh is just opaque and the internal temperature reaches 145°F.
In the meantime, steam the brown rice if not pre-cooked. If already cooked, gently reheat it.
For the spinach, heat 1/2 teaspoon of olive oil in a separate pan over medium heat. Add the fresh spinach and sauté for 1-2 minutes until wilted, seasoning lightly with salt.
Plate the seared salmon alongside the steamed brown rice and sautéed spinach. Serve immediately.
