INGREDIENTS
6 ounces Salmon Fillet
1 serving (100g) Asparagus Spears
1 cup Cauliflower
1 teaspoon Olive Oil
1 clove Garlic
1 Lemon wedge
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season it with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes, then flip and cook for another 3 minutes or until desired doneness is reached.
While the salmon is cooking, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam the cauliflower florets with a clove of garlic for about 8-10 minutes until very tender.
Once softened, blend or mash the cauliflower and garlic together with a teaspoon of olive oil until you achieve a smooth, creamy consistency. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of the cauliflower mash. Squeeze a wedge of lemon over the salmon before serving.
