INGREDIENTS
6 oz Turkey Cutlets (skinless)
1 cup Green Beans
1 cup Cauliflower
1.5 tbsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the turkey cutlets dry and season both sides with salt and pepper.
Heat a skillet over medium-high heat and add half of the olive oil. Once hot, sear the turkey cutlets for about 3-4 minutes per side, or until cooked through and lightly browned. Remove from the skillet and set aside.
While the turkey cooks, steam the green beans in a steamer basket over boiling water for about 5 minutes until tender-crisp.
Break the cauliflower into florets and steam for about 8-10 minutes until tender.
In a small saucepan, warm the remaining olive oil with the minced garlic until fragrant but not burnt.
Transfer the steamed cauliflower to a bowl, add the garlic olive oil, and mash until smooth. Season with salt and pepper to taste.
Plate the turkey cutlets alongside the steamed green beans and garlic mashed cauliflower. Serve immediately.
