INGREDIENTS
5 oz Pork Tenderloin (142 g)
1 cup Napa Cabbage (70 g)
1/4 Avocado (50 g)
1/4 cup shredded Carrot (25 g)
1/8 cup thinly sliced Red Onion (15 g)
1 tsp Olive Oil (5 g)
1 tbsp Lime Juice (15 g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Season the pork tenderloin generously with salt and pepper. Place it in a slow cooker with a splash of water or broth to keep it moist.
Slow-cook the pork on low for 3-4 hours until it’s tender and easily shredded. Once cooked, transfer the pork to a baking sheet and crisp up the exterior by broiling in the oven for about 5 minutes, turning once to ensure even crisping.
While the pork is finishing, prepare the slaw. In a bowl, combine shredded Napa cabbage, shredded carrot, and thinly sliced red onion.
Dice the avocado and add it to the slaw. Drizzle with olive oil and lime juice, and toss gently to combine. Season with salt and pepper to taste.
Once the pork is crispy, slice it into thin pieces or shred it, and serve atop the fresh cabbage slaw with avocado.
Enjoy your balanced and flavorful meal!
