Start your day with a protein-packed scramble featuring fluffy egg whites and lean turkey sausage, tossed with fresh spinach and paired with tender roasted sweet potato. A light whole grain toast adds a satisfying crunch, making this wholesome breakfast both delicious and energizing.
INGREDIENTS
4 egg whites (132g)
3 oz turkey sausage (85g)
1 cup fresh spinach (30g)
1/2 medium sweet potato (75g)
1 tsp extra virgin olive oil (4.5g)
1 slice whole grain bread (40g)
1 tsp cooking spray (5g)
PREPARATION
Preheat your oven to 400°F.
Peel and dice the sweet potato into small cubes. Toss the cubes with extra virgin olive oil and a pinch of salt and pepper, then spread evenly on a baking sheet.
Roast the sweet potato in the preheated oven for about 20-25 minutes or until tender and slightly crispy on the edges.
While the sweet potato is roasting, spray a non-stick skillet lightly with cooking spray and heat over medium heat.
Add the turkey sausage to the skillet, breaking it up into bite-sized pieces. Sauté for 3-4 minutes until browned.
Pour in the egg whites and add the fresh spinach. Stir continuously until the egg whites are fully cooked and the spinach is wilted, about 3-5 minutes.
Plate the scramble alongside the roasted sweet potato.
Toast the whole grain bread, then serve on the side to complete your balanced breakfast.
