INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1/2 cup Cauliflower
1 tsp Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Once hot, add the salmon, skin-side down if applicable, and sear for about 3-4 minutes until the skin is crispy.
Flip the salmon carefully and cook for an additional 3-4 minutes until the flesh is just cooked through. Remove from the skillet and set aside.
Steam the green beans in a steamer basket over boiling water for about 4-5 minutes until they are tender yet still crisp. Season lightly with salt and pepper.
In a small pot, steam the cauliflower florets until very tender, about 6-8 minutes. Meanwhile, lightly sauté the garlic in olive oil for 30 seconds until fragrant.
Transfer the steamed cauliflower to a bowl and mash it with the garlic olive oil mixture, adding a pinch of salt and pepper to taste.
Plate the seared salmon alongside the steamed green beans and garlic mashed cauliflower. Serve immediately.
