1/2 cup cooked Brown Rice
1 portion of Asparagus (approx. 100g)
1 tbsp Olive Oil
2 tbsp Fresh Herbs (Parsley & Dill)
1 tbsp Lemon Juice
Salt & Black Pepper, to taste
PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Drizzle the cod fillet lightly with olive oil, then season with salt, pepper, and a squeeze of lemon juice. Sprinkle fresh herbs over the top.
Place the cod on the baking sheet and bake for 12-15 minutes, until the fish is opaque and flakes easily.
