Enjoy a sophisticated twist on salmon dinner featuring a crunchy, nutty pistachio crust paired with tender lemon-herb roasted asparagus. This dish is a delightful balance of textures and flavors – juicy salmon with a crisp exterior complemented by bright, aromatic asparagus seasoned to perfection.
INGREDIENTS
5 oz Salmon Fillet
0.5 oz Pistachios, shelled (crushed)
1 cup Asparagus
1 tsp Olive Oil
1 tbsp Lemon Juice
2 tbsp Fresh Herbs (Parsley & Dill)
Salt and Black Pepper, to taste
PREPARATION
Preheat your oven to 400°F.
In a small bowl, crush the pistachios until they form a coarse meal. Mix in a pinch of salt, black pepper, and finely chopped fresh herbs.
Pat the salmon dry with a paper towel. Brush one side lightly with olive oil and season with a little salt and pepper.
Press the oil-coated side of the salmon into the crushed pistachio mixture to form an even crust.
Place the pistachio-crusted salmon on a baking sheet lined with parchment paper, crust side up.
Toss the asparagus with olive oil, lemon juice, and a sprinkle of fresh herbs, then lay them around the salmon on the baking sheet. Season lightly with salt and pepper.
Roast in the oven for about 12-15 minutes, or until the salmon is cooked through and the asparagus is tender but still crisp.
Remove from the oven, garnish with an additional drizzle of lemon juice if desired, and serve immediately.
