INGREDIENTS
2 oz dry Rice Noodles (56g)
150g Firm Tofu
1 Tbsp Peanut Butter
0.5 cup Shelled Edamame (75g)
1 cup Mixed Fresh Vegetables (100g)
1 Tbsp Lime Juice
1 Tbsp Soy Sauce
1 tsp Fresh Ginger (minced)
1 clove Fresh Garlic (minced)
PREPARATION
Prepare the rice noodles according to package instructions until al dente, then drain and set aside.
Press the tofu to remove excess moisture, then cut into cubes. Lightly season with a pinch of salt and pepper.
Heat a non-stick pan over medium-high heat with a splash of oil; add tofu cubes and cook until all sides become crispy and golden brown.
In a small bowl, whisk together peanut butter, lime juice, soy sauce, minced ginger, minced garlic, and a couple of tablespoons of warm water to form a smooth, creamy sauce.
In a large bowl, combine the cooked noodles, crispy tofu, shelled edamame, and mixed fresh vegetables.
Pour the creamy Thai peanut sauce over the mixture and toss gently to ensure even coating.
Serve immediately, garnished with additional lime wedges or fresh herbs if desired.
