350g Extra Firm Tofu
200g Broccoli
1 tbsp Olive Oil
2 tbsp Cornstarch

Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C).
Press the tofu for 15-20 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with 2 tbsp of cornstarch, 1 tsp garlic powder, salt, and pepper until evenly coated.
On a baking sheet lined with parchment paper, spread the tofu cubes and drizzle with half of the olive oil.
Roast the tofu in the preheated oven for 25 minutes, turning halfway through for even crisping.
While tofu roasts, chop the broccoli into florets and toss with the remaining olive oil, salt, and pepper.
Spread the broccoli on another baking sheet and roast in the oven for about 20 minutes until tender and slightly caramelized.
