INGREDIENTS
6 oz Chicken Breast (170g)
2 cups Fresh Spinach (60g)
2 cloves Garlic
1 tbsp Olive Oil (13.5g)
1 tbsp Lemon Juice (15g)
1 tsp Mixed Dried Herbs
Salt and Pepper to taste
PREPARATION
Pat the chicken breast dry and season both sides with salt, pepper, and mixed dried herbs.
Heat half the olive oil in a skillet over medium-high heat. Once hot, add the chicken breast and sear for about 5-6 minutes per side until golden brown and cooked through.
Remove the chicken from the pan and let it rest; squeeze lemon juice over it for added brightness.
In the same skillet, add the remaining olive oil and sauté minced garlic until fragrant, about 30 seconds.
Add the spinach to the skillet and sauté until just wilted, roughly 2-3 minutes. Season with a pinch of salt and pepper.
Plate the chicken with a generous serving of garlic spinach and enjoy while warm.
