INGREDIENTS
5 oz Raw Shrimp (142g)
1 cup Whole Wheat Linguine (cooked, ~140g)
1 tbsp Unsalted Butter (14g)
2 Garlic Cloves
1 tsp Fresh Lemon Juice
2 tbsp Fresh Parsley
PREPARATION
Bring a pot of salted water to a boil and cook the whole wheat linguine according to package instructions until al dente. Drain and set aside.
Meanwhile, pat the shrimp dry and season lightly with salt and pepper.
In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic cloves and sauté until fragrant, about 1 minute.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and are just cooked through.
Drizzle fresh lemon juice over the shrimp and toss to combine.
Add the cooked whole wheat linguine to the skillet and gently toss to coat all the ingredients in the garlic butter sauce.
Garnish with fresh parsley and serve warm.
