PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into 1/2-inch thick slices or cubes.
In a bowl, whisk together lemon juice, minced garlic, mixed dried herbs, salt, and pepper. Gently toss the tofu in the marinade and let it sit for 10 minutes.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
