PREPARATION
Preheat your oven to 400°F (200°C).
Pat the chicken thigh dry with a paper towel. In a small bowl, mix the olive oil, minced garlic, and chopped fresh herbs along with a pinch of salt and pepper.
Rub the herb mixture evenly over the chicken thigh. Place the chicken in a baking dish.
