INGREDIENTS
250g Extra Firm Tofu
0.5 cup Cooked Chickpeas
1 tbsp Olive Oil
1 tbsp Fresh Rosemary
1 tbsp Fresh Thyme
1 tbsp Lemon Juice
1 Garlic clove
Salt & Black Pepper to taste
PREPARATION
Press the tofu to remove excess moisture, then cut into 1/2-inch thick steaks.
In a shallow dish, whisk together olive oil, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper.
Marinate the tofu steaks in the herb mixture for at least 15 minutes to absorb the flavors.
While the tofu marinates, lightly toss the cooked chickpeas with a pinch of salt, a drizzle of olive oil, and a sprinkle of rosemary.
Heat a non-stick skillet over medium heat. Add the tofu steaks and sear each side for about 3-4 minutes until golden brown and crispy.
In a separate pan or the same skillet once tofu is done, warm the chickpeas until they're heated through and slightly crispy.
Plate the tofu steaks alongside the roasted chickpeas. Garnish with additional fresh herbs if desired, and serve warm.
