INGREDIENTS
5 ounces boneless skinless chicken breast
1 tsp extra virgin olive oil (for chicken)
1 tbsp fresh lemon juice
1 garlic clove, minced
2 tbsp mixed fresh herbs (rosemary and thyme)
Salt and black pepper to taste
1 bunch asparagus (about 6 spears)
1 tsp extra virgin olive oil (for asparagus)
PREPARATION
Preheat your oven to 425°F.
In a small bowl, combine the olive oil, lemon juice, minced garlic, and chopped fresh herbs. Season with salt and pepper to taste.
Pat the chicken breast dry with a paper towel. Brush the lemon herb mixture evenly on both sides of the chicken.
Place the chicken on a lightly greased baking sheet or in a roasting pan.
Trim the woody ends off the asparagus. Toss the asparagus spears with a teaspoon of olive oil, and season lightly with salt and pepper.
Arrange the asparagus around the chicken on the baking sheet.
Roast in the preheated oven for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F and the asparagus is tender and slightly crispy.
Remove from oven, let the chicken rest for a couple of minutes, then serve the chicken alongside the roasted asparagus.
