Enjoy a perfectly seared salmon paired with crisp, vibrant asparagus and a creamy, subtly sweet potato mash, all harmonizing delightful flavors and textures for a nutritious, low-calorie dinner.
INGREDIENTS
7 ounces Salmon Fillet
6 Asparagus Spears
150 grams Sweet Potato
1 tsp Olive Oil
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat. Sear the salmon skin-side down for about 4 minutes until the skin is crispy, then flip and cook for an additional 3-4 minutes, or until desired doneness.
While the salmon is cooking, trim the ends of the asparagus and steam them over simmering water for about 4-5 minutes until tender-crisp.
Peel and dice the sweet potato. Boil in water for about 15 minutes until soft.
Drain the sweet potato and mash with 1 teaspoon of olive oil, adding a pinch of salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a serving of sweet potato mash. Serve immediately.
