160g Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
0.75 tbsp Olive Oil
2 cloves Garlic
PREPARATION
Season the salmon fillet lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the 0.75 tbsp olive oil.
Place the salmon in the skillet and sear for about 3-4 minutes on each side, or until a golden crust forms and the fish is just cooked through.
Meanwhile, steam the green beans in a steamer or in a covered pot with a splash of water for about 5-6 minutes until tender-crisp.
In a small saucepan, add the cauliflower florets and cover with water. Bring to a boil and let simmer until tender, about 8-10 minutes.
Drain the cauliflower and transfer it to a bowl. Add the 2 garlic cloves (minced or lightly crushed) and the remaining olive oil. Mash until smooth, seasoning with salt and pepper to taste.
