PREPARATION
Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin with olive oil spray or a very thin coating of olive oil.
In a bowl, combine the egg whites, chopped fresh spinach, and diced red bell pepper. Stir gently to mix evenly.
Season the mixture with salt, pepper, and a pinch of dried oregano if using.
