PREPARATION
Preheat a non-stick skillet over medium heat and add 1.5 teaspoons of extra virgin olive oil.
Dice the mixed bell peppers and roughly chop the spinach. Sauté the veggies in the skillet for about 2-3 minutes until they begin to soften.
Add the turkey sausage link (sliced or crumbled) to the pan and cook for another 2 minutes until warmed through.
Pour in the egg whites and gently stir to combine with the veggies and sausage. Cook until the egg whites are set but still moist, about 3-4 minutes.
