A vibrant stir-fry featuring crispy tofu and edamame paired with a rainbow of fresh vegetables, all tossed in a light sesame soy dressing. This dish offers a satisfying crunch and delightful nutty aroma with every bite, perfect for a balanced, clean meal.
INGREDIENTS
250g Firm Tofu
100g Shelled Edamame
1 cup Broccoli
0.5 cup Red Bell Pepper
0.5 cup Snow Peas
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Fresh Ginger
1 clove Garlic
1 tsp Toasted Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, toss tofu cubes lightly with a sprinkle of salt and a dusting of cornstarch if desired for extra crispiness.
Heat sesame oil in a non-stick skillet or wok over medium-high heat and add the tofu. Cook until all sides are golden and crispy, then remove tofu from the pan.
In the same pan, add minced garlic and grated ginger, and sauté briefly until fragrant.
Add broccoli, red bell pepper, and snow peas. Stir-fry for about 3-4 minutes until just tender yet still crisp.
Return the crispy tofu to the pan along with the shelled edamame. Drizzle with low-sodium soy sauce and toss everything gently to combine.
Finish by sprinkling toasted sesame seeds and serve immediately.
