2 slices Whole Grain Bread
4 ounces Fresh Mozzarella
1/2 medium Tomato
1 handful Fresh Basil Leaves
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat a grill pan or skillet over medium heat.
Lightly brush one side of each bread slice with olive oil and season with a pinch of salt and pepper.
Place the bread, oiled side down, on the grill pan and toast until lightly crispy, about 2-3 minutes.
On the non-toasted side of one slice, layer the fresh mozzarella evenly.
Add thin slices of tomato and scatter fresh basil leaves on top of the mozzarella.
Top with the second slice of bread, toasted side facing inwards.
