A comforting bowl of savory beef soup featuring tender lean beef, slowly caramelized onions, and a rich tomato broth, topped with crunchy, golden whole grain croutons. Each spoonful delivers a heartwarming blend of flavors and textures perfect for any meal of the day.
INGREDIENTS
4 ounces Lean Beef Sirloin
1/2 medium Yellow Onion
1 tsp Olive Oil (for onions)
1 cup Low-Sodium Beef Broth
1 tbsp Tomato Paste
1 slice Whole Grain Bread
1 tsp Olive Oil (for croutons)
1 garlic clove
Salt and Pepper to taste
PREPARATION
Thinly slice the lean beef into bite-sized strips.
Peel and slice the half medium onion. Mince the garlic.
Heat 1 teaspoon of olive oil in a saucepan over medium heat. Add the sliced onions and a pinch of salt, and cook slowly until they are soft and deeply caramelized, about 10 minutes. Add minced garlic during the last 2 minutes of cooking.
Pour in the beef broth and stir in the tomato paste. Bring the mixture to a simmer.
Add the beef strips to the simmering soup and cook for 5-7 minutes, until the beef is tender and cooked through.
Meanwhile, cut the whole grain bread into small cubes. In a small pan, heat 1 teaspoon of olive oil over medium heat. Toss the bread cubes in the oil and toast them until they are golden and crispy, about 3-4 minutes.
Season the soup with salt and pepper to taste, then ladle into bowls and top with the crispy croutons.
Serve immediately and enjoy this hearty, flavor-packed soup.
