Peel (if desired) and dice the sweet potato into 1-inch cubes. Toss with half of the olive oil, salt, and pepper, then spread on a baking sheet.
Roast the sweet potato cubes in the preheated oven for about 25-30 minutes, stirring halfway through to ensure even cooking.
While the sweet potatoes are roasting, pat the sirloin steak dry and season generously with salt and pepper.
