3 oz Jumbo Pasta Shells
1/2 cup Part-Skim Ricotta Cheese
1 cup Fresh Spinach
1/2 cup Marinara Sauce
1/4 cup Part-Skim Mozzarella Cheese
1 Egg White
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Bring a pot of lightly salted water to a boil. Add the jumbo pasta shells and cook according to package directions until al dente. Drain and set aside to cool slightly.
In a bowl, mix the part-skim ricotta cheese with the egg white and minced garlic. Stir in the fresh spinach. Season the mixture with a pinch of salt and pepper.
Coat the inside of a baking dish with a thin layer of marinara sauce.
Fill each cooked shell with the ricotta and spinach mixture and arrange them in the baking dish.
Pour the remaining marinara sauce over the shells and sprinkle the top with part-skim mozzarella cheese.
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
Allow to cool slightly before serving.
