INGREDIENTS
6 oz Smoked Turkey Sausage
1 medium Bell Pepper
1 medium Zucchini
1 small Red Onion
1/2 cup Cherry Tomatoes
3 Egg Whites
1 tsp Olive Oil
Salt and Pepper to taste
Garlic Powder to taste
PREPARATION
Preheat your oven to 400°F.
Slice the smoked turkey sausage into 1/2-inch rounds, dice the bell pepper and zucchini, slice the red onion into thin wedges, and halve the cherry tomatoes.
In a large bowl, combine the sausage, bell pepper, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil, and season with salt, pepper, and garlic powder. Toss until everything is evenly coated.
Spread the mixture right out onto a large sheet pan in a single layer.
Roast in the preheated oven for 20-25 minutes, stirring halfway through to ensure even cooking.
Meanwhile, lightly whisk the egg whites. When the veggies and sausage are almost done, remove the pan from the oven and create a few small wells in the hash. Pour the egg whites into the wells.
Return the pan to the oven and bake for an additional 5-7 minutes, or until the egg whites are set.
Remove from the oven, give the dish a gentle toss, and serve hot.
